Catering For Vegans

We are a catering company that caters numerous offices that request Vegan Meals be added as special request. I would like to send something that is well liked and interesting for our Vegan Clients. I've looked at several Vegan Cook books but don't know what to pick. Thought maybe you could help me to make sure our vegans well taken care of.
