Sweet potato crimini mushroom cream soup

Postby ChrisC1977 » Mar 7, 2011 2:20 am

just did this on the fly so I don't have real measurements. But it was really good and filling and savory.

1 1/2 cups of vegetable broth
5-6 crimini mushrooms
1 large sweet potato (small diced)
1 medium new potato (Tonight, I used 1 few small canned new potatoes, plus some of the water from the can)
1/2 tsp ground sage
1/2 tsp thyme
1/2 tsp rosemary

combine all ingredients in a pot and bring to a boil...simmer until potatoes are tender. Transfer to a blender and blend until relatively smooth. Transfer back to pot and simmer for a few minutes. At the end I added about 1/8 cup of cooked chopped kale. It was very tasty! :)

Oh! This does sound lovely. While I don't have mushrooms on hand, I do have sweet and white potato. Perhaps I cook some up, add part of a vegetable cube and water and purée for a nice soup for supper.
