Ingredients 1/2 cup wild rice
1 cup brown rice
1 med red onion
1 small red capsicum
2 celery sticks
2 tablespoons chopped fresh parsley
4 tablespoons chopped fresh pecans(I use walnuts)
Dressing
1/4 cup orange juice
1/4 cup lemon juice
1 teaspoon finely grated orange rind 1 teaspoon finely grated lemon rind
1/3 cup olive oil
Instructions 1) Cook wild rice in pan of boiling water for 30-40 mins, until just tender, drain well and cool. Meanwhile boil brown rice for 25-30 mins, drain well and cool
2) Chop the onion and capsicum finely, chop celery into thin slices, combine in bowl with parsley and rices. Place the pecans in a dry frying pan and stir over a med heat for 2-3 mins until lightly toasted, transfer to plate and cool
3) To make dressing combine all ing in bottle and shake well
4) Add pecans, pour dressing over salad and gently fold though.
