Ingredients 1 packet couscous
3 large golden squash
Large Handful continental parsley
Small handful fresh mint
1/2 tub cottage cheese or soy substitute
Generous knob butter (or substitute)
1 punnet golden egg tomatoes
Instructions Prepare couscous according to packet instructions. set aside to cool.
Blanch chopped squash with a pinch of salt and a pinch of sugar.
Finely chop all herbs
Chop tomatoes in half
Combine all ingredients
