Ingredients 1 tomato
1/3 capsicums (all colours)
1/2 brown/red onion
Some olives (with no pits)
1 stem fresh parsley/coriander/mint leaf, finely chopped
Some olive oil
Dash of lemon/lime juice
Fresh ground pepper or 1 chilli
Instructions Wash and dice the tomato and capsicums into small cubes
Peel and thinly slice onion
Add all ingredients to salad bowl/wide bowl, Add olives, olive oil, chilli or fresh ground pepper and mix well
Sprinkle parsley/coriander/mint leaf and lemon juice
