Ingredients 1 cucumber
tablespoon yoghurt of choice
crushed fresh pepper
fresh coriander leaf
Instructions Wash and peel cucumber. If the seeds are tender and small, no need to deseed. Cut cucumber into tiny pieces. Transfer it to salad bowl. Add chopped coriander leaf, yoghurt and crushed pepper and blend gently. Cover bowl with clingwrap and cool in fridge. Have as snack or during meals in a small bowl. Add a few drops of fresh lemon juice for aroma and dash of tangy salad taste before serving.
