Black Bean and Avocado Salad

Ingredients (use vegan versions):

1 16 oz can of black beans (I prefer Goya, but others will do)
2 vine ripe tomatoes
1 red onion
1 avocado
1 tablespoon of olive oil
salt and pepper
Directions:
Using colander, rinse and drain black beans. Cut tomatoes, onion, and avocado. Combine all ingredients and drizzle with olive oil. Add salt and pepper to taste. This recipe is very simple and great for taking to pot lucks and cookouts.

Preparation time: 15 minutes
