Super Simple Veggie Sandwich

Ingredients (use vegan versions):

2 slices of multigrain vegan bread, toasted
hummus
cucumbers
shredded carrots
bean sprouts
salt and pepper
olive oil
Directions:

Toast the vegan bread, spread hummus on each side (I also like hummus on one side and dijon on the other) slice your veggies and spread em out--these are the veggies I like, but I'm sure mushrooms, tomatoes and peppers would be good, too. Shake a little salt and pepper over the whole thing and a touch of oil, too (of course these are optional--I just think it tastes a bit better this way).
