I am a fan of David Wolfe and he mentions Kim-Chi, and fermented foods. Can someone tell me more about this? And would it be considered raw?

Also the Live Salsa and raw saurcraut. Any information would be helpful.

Kim-chi is a Korean name ,
gimchi, kimchee, or Kim chee, is a traditional fermented Korean dish made of vegetables with varied seasonings.

There are hundreds of varieties of kimchi made with a main vegetable ingredient such as napa cabbage, radish, green onions or cucumber.
