I would eat it, easpecially if it will state that it's from a vegan owned bakery. But do your research before investing too much into it, try your products first on strangers, and don't limit your sales to vegans. (You can label all your product as cholesterol free for example)

I think it's better to keep vegan so your organism will adapt, you can try to add to your plate salt or soy sauce to make your dishes tastier (I understand you don't have that no sodium condition).

Actually taking vitamin B12 is better from supplements than from eggs, because those supplements were tested to prove that blood levels of B12 are increased when taking them.
